Easter Treats and Bakes GF & SCD

Since it's Good Friday today and surprisingly a beautifully warm and sunny day in West Yorkshire, I thought I would share a few recipes from my archives in case you're still planning your holiday meals and treats.

The grain free and SCD legal Hot Cross Bun recipe pictured above has been a HUGE favourite of my family and is one of the most popular recipes on my blog. If you're looking for a vegan or egg free version, I have added an option to make them with flax eggs.

The Grain Free Lemon Tart in a Glass is suitable for the SCD with a vegan option for the sweetener. It's so easy and quick to put together and looks fantastic presented in the glasses. Raspberries would also work instead of the blueberries or even redcurrants if you can get them at this time of the year (I saw some in Sainsbury's today).

A lovely alternative for breakfast on Easter Sunday could be my SCD legal grain free Hot Cross Carrot Muffins which also appear in the first 365-Day Recipe Book compiled by The Earth Diet, I was so chuffed to be asked!

If you're looking for a refreshing salad recipe, try my Butternut Squash, Beetroot and Avocado Salad, it looks so colourful and is so nutritious. I'm preparing it on Sunday since everyone has requested salads for tea.

If you're looking for a  "not so very healthy" holiday treat try making a vegan and gluten free chocolate cake which can be decorated however you wish. I made the one above 3 years ago for the family who perhaps wouldn't have appreciated my healthier chocolate decorations at that time! The one I'm making for Easter Day will benefit from the caramel flavour of coconut sugar and the addition of a little honey or maple syrup. I'm decorating it with a dark chocolate egg broken into large pieces, YUM!

I love, love, love chocolate milk and this Chocolate Hazelnut Milk is so simple to make! Very popular in our household, it can also be made with almonds if you prefer.

Finally, I had to include the little treats above! I made Chocolate Krispie Buns into little nests every Easter when the children were young and decorated them by placing some small eggs into the middle. These ones are made with Perk!er Red Berry Flakes but any gluten free cereal will work - crispy brown rice is a lovely alternative.

I hope you all have a wonderful Easter weekend!
