Red Slaw GF SCD

Coleslaw has to be one of our favourite salads and this simple, raw coleslaw is packed full of nutrients and is suitable for vegans.

This recipe serves two or three people so double or treble the quantities if you need to. I've used egg-free mayonnaise in this recipe but you can use your own favourite if you wish.

Red Slaw GF SCD

¼ red cabbage
½ red onion
2 carrots
1 red pepper
5 tblsps mayonnaise
2 tblsps raisins (optional)

  • Very thinly slice the red cabbage, red pepper and red onion.
  • Grate the carrot.
  • Tip all the sliced vegetables into a bowl and mix together.
  • Add 5 tablespoons of mayonnaise.
  • If you are including raisins in the recipe, sprinkle them in.
  • Mix well.

  3. Hi Vicky,

So glad you shared with us. I'm a slaw addict. I can eat it everyday...and you know I LOVE cabbage. This is the perfect dish for summer - light and healthy. And I love that you used your vegan mayo. Looks like the real thing. Can't go wrong with that. I should make this mayo for my vegan roasted potato salad! I prefer homemade anything over store bought.

Hope you're well, Vicky, and enjoying your summer so far! Did you already go on your trip to Canada?

    Hugs,

  4. Caralyn - thank you! Yes, I totally agree - simple is sometimes the best!

Kaitlin - thank you for visiting and your kind words!

Amber - Yes I know you love cabbage, hehe! It would definitely work with your potato salad BUT it would need to be eaten quite quickly because mayonnaise does have a tendency to dry out if left too long - this is easily rectified by adding more!!

We haven't been to Canada yet - can't wait, there's another amazing reason why we're going...so exciting!!!!

  8. Yum! Loving a great summer slaw ;)
Totally had this recipe opened up this weekend, but I didn't have the red pepper or red onion - still, it came as a great reference when I couldn't figure out what to add to mine. Definitely doing this one next time.
The simple recipes are often just the best!
