Coleslaw has to be one of our favourite salads and this simple, raw coleslaw is packed full of nutrients and is suitable for vegans.
This recipe serves two or three people so double or treble the quantities if you need to. I've used egg-free mayonnaise in this recipe but you can use your own favourite if you wish.
Red Slaw GF SCD
¼ red cabbage
½ red onion
1 red pepper
5 tblsps mayonnaise
2 tblsps raisins (optional)
- Very thinly slice the red cabbage, red pepper and red onion.
- Grate the carrot.
- Tip all the sliced vegetables into a bowl and mix together.
- Add 5 tablespoons of mayonnaise.
- If you are including raisins in the recipe, sprinkle them in.
- Mix well.
