This is one of my favourite snacks and it's the simplest of recipes. I LOVE almonds and they're so good for you - good for your immune system, good for your bones, good for your brain, good for your skin and good for your heart!
One of the drawbacks of buying ready prepared salted almonds are the additives, especially maltodextrin. This is what Elaine Gottschall, author of the book "Breaking the Vicious Cycle: Intestinal Health Through Diet", had to say about maltodextrin :
"Maltodextrin is the worst of the small molecules of sugars. It is a very short chain of glucose molecules (derived from starch). The chances of digestion are practically nil. It therefore will feed bacteria and because of its particular structure, Elaine feels it is worse than even lactose."A while back I bought a large packet of a very well known brand of salted almonds thinking that the ingredients would be the same as in the smaller packet. I ate half a mug of them and within the hour I started to feel nauseous! The following day, my husband read the ingredients on the packet , they contained maltodextrin! I strongly believe that it was the maltodextrin that made me feel so ill. I think the more you cut out of your diet, the more sensitive you become to processed foods and additives.
I used a mixture of blanched and unblanched almonds and I just sprinkled them with a little Cornish Sea Salt and popped them in the oven - instant snack! The cooking time may vary depending on your oven and if it is a fan oven, you may wish to lower the temperature by 10°.
Salted Roasted Almonds GF SCD
150 g almonds
1 tsp natural sea salt
- Set the oven to 180° C.
- Tip the almonds on to the baking tray.
- Sprinkle the salt over the almonds.
- Bake for 10 to 15 minutes in the middle of the oven (or longer see note above) opening the door every 5 minutes to give them a stir.
- Cool before eating
