March Muffin Madness at GFE - Gluten Free Easily

I was honoured and delighted to be invited by Shirley to contribute a recipe to the March Muffin Madness Event over at GFE - Gluten Free Easily this year. Thank you Shirley. Have you seen the wonderful contributions this year? They're all fantastic and there's savoury muffins as well as sweet. All diets are catered for including grain free, vegan and vegetarian and, of course, they're ALL gluten free! There's some very talented recipe designers out there in blogland!

Another great reason to visit this event is the GIVEAWAY!!!!! If you leave a comment on the post, you will be entered into the MMM giveaway that will be conducted on March 31 and includes three different muffin pans (mini 24-cup, steel 12-cup, or cast iron 6-cup), an immersion blender, a spiral vegetable slicer, an electric pressure cooker, a 12-cup food processor, and—the best of all!—a Blendtec all-in-one-kitchen appliance (with a Wildside Jar)! EVERY comment in the series will be an entry for the final giveaway, so if you’ve missed some posts, take a moment and visit them and leave a single comment on each to get in the maximum number of entries - AWESOME!!!!

With Easter approaching, I decided to share my Hot Cross Carrot Muffin recipe at the event.

Spiced like a Hot Cross Bun, these muffins are perfect for those of you following the SCD as well as other gluten and grain free diets. Please click on this link to see the recipe as well as all the other enticing, luscious muffin recipes there - who needs a recipe book?

Please make the time to visit Shirley over on Facebook and Twitter as well as on her website. You might also like to visit her other website, All Gluten Free Desserts All the Time where she very kindly shares an abundance, and I DO mean AN ABUNDANCE of gluten free dessert and cake recipes which she discovers on the internet.
