March Muffin Madness at GFE - Gluten Free Easily
I was honoured and delighted to be invited by Shirley to contribute a recipe to the March Muffin Madness Event over at GFE - Gluten Free Easily this year. Thank you Shirley. Have you seen the wonderful contributions this year? They're all fantastic and there's savoury muffins as well as sweet. Grain Free Hot Cross Carrot Muffins GF SCD
This morning I had a brainwave, why not use strips of courgette (zucchini to most of you) to make a cross on the top of muffins? I was going to make carrot cake this Easter for the family but instead I decided to make Hot Cross Carrot Muffins instead using the spices of a Hot Cross Bun. I'm so pleased I decided to make them because they taste wonderful!!

Courgette and Carrot Muffins GF SCD
Carrots and Courgettes are packed with nutrients so you can feel really good about yourself when you eat these muffins! Courgettes are rich in vitamin C and Carrots are rich in Vitamin A and by combining the two together you also benefit from Vitamins B1, B2, B6, E and K as well as folic acid and the minerals potassium, manganese, phosphorous, magnesium and copper.
