Toffee Ice Cream GF SCD
I think one of the most difficult things about making ice-cream is remembering to put the bowl in the freezer the night before. Frozen yogurt can be just as delicious as regular ice cream and makes a lovely treat for followers of the Specific Carbohydrate Diet.

Pineapple Muffins GF SCD
Pineapple is one of my favourite fruits especially freshly chopped with bananas. It's packed full of Vitamin C as well as being a fantastic source of manganese which helps to support good bone health. It also contains the enzyme, bromelain which has anti-inflammatory properties and also aids digestion.
Spicy Bean Burgers GF SCD
Tonight we ventured out to a wonderful old picture house in Leeds to watch the film Planeat which was showing as part of The UK Green Film Festival. The documentary presents a convincing case for the re-examination of the heavily laden meat and dairy diet of the West in the light of the work of the scientists and doctors featured in the film. It's message is three-fold, firstly people need to adopt a more plant based diet; secondly, businesses should start to put plant based meals on the menu and thirdly, governments should start supporting small scale organic farming as opposed to factory farming. The film certainly struck a chord with me.

Carrot Salad GF SCD
Carrots are nutritional heroes,a great source of Vitamin A as well as Vitamins B1, B2, B6, C and K in addition to potassium, phosphorous and magnesium. They also taste good! But don't eat too many or you will literally turn orange!
